A vegetable burger like no other! Easy to make and enjoyed by all (even children!).

Ingredients 🧅🍅🍆🫑🧀
Ingredients for the Burger
• ½ Red Pepper
• ½ Yellow Pepper
• 2 Tablespoons Olive Oil
• Salt and Pepper
• 4 Brown Mushrooms
• ½ Aubergine, thinly sliced (You can use the blade on the grater)
• 2 Burger Buns
• Slices Cheese

Ingredients for Hummus
• 100g Chickpeas (6 Tablespoons)
• Juice of ¼ Lemon
• 20ml Extra Virgin Olive Oil (4 Tablespoons)
• 30ml Warm Water (2 Tablespoons)
• Clove Garlic

Method 📖
Burger
1. Preheat the oven: Set your oven to 200°C (180°C fan) or 400°F.
2. Roast the Vegetables:
   - Halve the peppers and slice the aubergine and mushrooms. Arrange them on a baking tray lined with parchment paper.
- Drizzle with olive oil and sprinkle with salt to taste.
  - Roast in the preheated oven for about 20 minutes, or until the vegetables are tender and slightly caramelized.
3. Prepare the Hummus: While the vegetables roast, prepare your hummus. You can make it in advance or while the vegetables are cooking.
4. Assemble the Burger:
  - Get your burger buns ready. Spread a generous layer of hummus on the bottom half of each bun.
   - Once the vegetables are roasted, stack them onto the hummus-covered bun.
   - Add a slice of cheese (your choice of cheese, such as cheddar or vegan cheese) on top of the roasted veggies. If desired, place the assembled burger under the grill for a minute to melt the cheese.
5. Top and Serve: Place the top bun on your stacked veggie layers and serve!

Hummus
1. Weigh the Chickpeas: Measure out 100g (6 tbls) of chickpeas and set aside the remainder for later use.
2. Shell the Chickpeas: Gently remove the skins from the chickpeas to create a smoother texture.
3. Crush the Garlic: Peel and crush the garlic clove, then add it to the chickpeas.
Combine Ingredients: Add the lemon juice, olive oil, and warm water to the chickpeas and garlic.
4. Blend Together: Use a hand blender (or food processor) to blend everything into a smooth, creamy paste.
