Rice noodles are a healthy alternative to egg or wheat noodles. Stir fry meals are one of the quickest meals to make for lunch or dinner. It is important to hold onto the handle of your wok whilst you are stir frying to keep your little hands safe.

Let’s prepare a Rice Noodle Stir Fry 🥢🌽🥬🍄🌶️🧄🥡

This is what you will need for this recipe: 🥣🥄

Ingredients 🧅🧄🌱🍄🌽🥦🥬
• 1 Round of Rice Noodles
• 500ml Water (2 Cups)
• 1 Clove Garlic
• ½ Teaspoon Dried Ginger or Fresh Ginger (preferable)
• 2 Baby Sweetcorn
• 2 Pieces Pak Choi
• ½ Onion
• Vegetable Oil
• 3 Stems Frozen Broccoli
• 5 Mushrooms (preferably Chestnut)
• ½ Red Pepper
• 2 Tablespoons Ready made Sweet Thai Chilli Sauce
• 1 Tablespoon Soya Sauce

Method 📖
1. Boil the Water: Bring 500ml (2 cups) of water to a boil in a saucepan.
2. Cook the Rice Noodles: Add the rice noodles to the boiling water and cook according to the package instructions.
3. Drain the Noodles: Once cooked, drain the noodles using a sieve and set aside to mix with the stir-fried vegetables later.
4. Prepare the Aromatics: Slice the onion, crush the garlic, and grate or finely chop the ginger. Add them to a pan with a little vegetable oil and sauté until fragrant.
5. Add the Red Pepper: Dice the red pepper and add it to the pan, cooking for a few minutes.
5. Cook the Vegetables: Slice the mushrooms, baby sweetcorn, and Pak Choi. Add them to the pan along with the frozen broccoli, stirring until all vegetables are tender but still crisp.
7. Add the Sauces: Pour in the Sweet Thai chilli sauce and soy sauce, mixing well to coat the vegetables evenly.
8. Combine with Noodles: Add the cooked rice noodles to the pan and toss everything together until fully combined.
