Making cupcakes is easy and a delicious anytime treat. A grater works fine, but a zester is even better for small hands to use.

Let’s bake some Lemon Drizzle Cakes 🍋🧁

This is what you will need for this recipe: 🥣🥄

Ingredients (Makes 6 Cupcakes) 🍋🧈 🍚 🌾 🥚
• 75g Butter/Margarine, softened (5 Tablespoons)
• 75g Caster Sugar (⅓ Cup + 1 Tablespoon)
• 75g Self-Raising Flour (⅔ Cup)
• 1 Large Egg
• 1 Teaspoon Vanilla Extract
• Juice of ¼ Lemon (½ Tablespoon)

Ingredients for Topping 🍋🍚
• 25g Icing Sugar (3 Tablespoons)
• Juice of ¼ Lemon(½ Tablespoon)
• Zest of 1 Lemon

Method 📖
1. Preheat the oven: Set your oven to 180°C (350°F).
2. Prepare the batter: Weigh the butter/margarine and sugar into a bowl. Whisk with a whisk or fork until the mixture turns pale yellow.
3. Add flavouring: Stir in the vanilla extract.
4. Incorporate the egg: Crack and check the egg, then gradually add it to the bowl, mixing as you go.
5. Add dry ingredients: Weigh in the self-raising flour and gently whisk. Avoid overmixing to keep the batter light and fluffy.
6. Add lemon juice: Pour in the lemon juice and mix slowly.
7. Zest the lemon: Use a grater to zest the lemon. For a stronger flavour, mix some zest into the batter.
8. Fill the cases: Scoop the mixture into muffin cases, using a spatula to scrape out all the batter.
9. Bake the cupcakes: Place in the oven and bake for 16 minutes until well risen.
10. Make the drizzle: While the cupcakes are baking, mix the icing sugar, lemon juice, and zest to create the drizzle.
11. Finish and serve: Once baked, spread the drizzle over the hot cupcakes and allow them to cool slightly before serving.

Don’t Forget! 📌

The lemon zest can be used inside the batter as well as in the drizzled icing on the top. Try using satsuma or orange for a different citrusy flavour.
