Hola! Easy Empanadas

What’s Cooking Today? 👩🏻‍🍳 

Every South American country has it’s own recipe for Empanadas. Usually they contain beans, sweetcorn and Jalapeno chillies. In this recipe, I show how to put them together to make a nutritious lunch or dinner.

Let’s make some Empanadas 🥟🌶️

This is what you will need for this recipe: 🥣 🥄

Ingredients for Empanadas 🧅🌾🌽🫘🥚🧄
• 1 Tablespoon Olive Oil
• ½ Brown Onion, finely diced
• 1 Teaspoon Smoked Paprika
• ½ Tin Sweetcorn
• 200g Mixed Beans (1 Cup)
• ½ Tablespoon Chipotle Paste
• 1 Puff Pastry Sheet
• 1 Egg

Ingredients for Salsa 🧅🌶️🍅🌿🧄
• 2 Tomatoes
• ½ Can Chopped Tomatoes
• ½ Red Onion
• A Few Sprigs of Coriander (Cilantro)
• ½ Jalapeño Chilli
• 1 Clove Garlic
• ½ Lime Juice (1 Tablespoon)
• ¼ Teaspoon Chilli Powder
• ¼ Teaspoon Cumin
• ½ Teaspoon Sugar
Salt and Pepper to taste

Method 📖
1. Make the salsa: Add all the salsa ingredients into a jug and blend using a hand-held blender until smooth.
2. Cook the filling: Finely dice the brown onion. Add the olive oil to a frying pan and fry the onion until soft.
3. Add spices and vegetables: Stir in the smoked paprika, sweetcorn, mixed beans, a spoonful of the prepared salsa, and chipotle paste. Cook for a few minutes, then remove from heat and let cool slightly.
4. Prepare the pastry: Roll out the puff pastry sheet and cut into 4 to 6 circles using a cutter or small bowl.
5. Preheat the oven: Set the oven to 200°C (400°F).
6. Fill the empanadas: Place a dollop of filling into the centre of each pastry circle. Fold over and using a fork, press the sides down forming a half moon shape with a pattern on the edge.
7. Seal with egg: Crack and check the egg, then use it to seal the edges of each empanada. Brush the tops with egg as well.
8. Bake: Place on a baking tray and bake for 20 minutes or until golden brown.

Don’t Forget! 📌

The salsa is a very important part of the filling of the Empanada. You can also use basil or parsley in the salsa, but coriander (Cilantro) is the best!
