A Healthier Natural Sweet Treat

This recipe is different to most to show you how we can use natural sugars to create a sweet treat, but is much healthier than using refined sugars. Make plain pancakes with half the batter and then add the blueberries to make the other half more interesting!

Let’s make some Blueberry Pancakes 🥞🍋🍯

This is what you will need for this recipe: 🥣 🥄

Ingredients  🥚 🍯
1 Ripe Banana
• 1 Egg
• 120ml Milk (½ Cup)
• 100g Wholemeal Flour (¾ Cup)
• 1 Teaspoon Baking Powder
• Pinch of Cinnamon
• 100g Blueberries (½ Cup)
• Drizzle of Honey
• Vegetable Oil for Frying

Method 📖
1. Mash the banana: Use a fork to mash the banana until smooth.
2. Mix wet ingredients: Crack and check the egg, then mix it with the banana. Add the milk and stir until combined.
3. Combine dry ingredients: In a separate bowl, mix the flour, baking powder, and cinnamon.
4. Mix the batter: Pour the banana mixture into the dry ingredients and stir until just combined.
5. Add the blueberries: Gently fold in the blueberries. It’s fine if some smash, as they may turn the batter slightly purple.
6. Heat the oil: Warm some vegetable oil in a pan over medium heat.
7. Cook the pancakes: Drop about two tablespoons of batter into the pan at a time. Fry until golden, then flip and cook the other side. Adding oil to your pan each time before adding more of the mixture.
8. Drizzle with honey: Once all the pancakes are cooked, drizzle honey on top.
9. Serve: Perfect hot or cold.
Enjoy on their own or with yogurt for extra flavour.

Don’t Forget! 📌

Different fruits can also be used for this recipe, for example, raspberries. When you fry pancakes, you need to have a lot of patience. Make sure that they are fully cooked before flipping over. The rule is that you only need to flip them once and brown them on both sides. I know this is hard because we want to have fun flipping them over and over, but then they break!
