A Sweet Twist: Banana, Chocolate, and Caramel Bliss!

We all think that using banana in a dessert will overpower the flavour, but, in this sweet treat, the banana creates the creaminess of the cupcake instead of being the main flavour. The techniques used helps children become more skilful in using piping bags to create a design. The cupcakes can be decorated in many different ways as depicted below.

Banana Choc Chip Caramel Cupcakes 🍌🍫🧁

Ingredients 🍌🍫🧁🧈🌾🥚
Ingredients for the Cupcakes
• 85g Butter or Margarine (6 Tablespoons)
• 100g Sugar (½ Cup)
• 1 Egg
• ½ Teaspoon Vanilla Extract
• 150g Flour (1¼ Cups)
• ¼ Teaspoon Salt
• ½ Teaspoon Ground Cinnamon
• ½ Teaspoon Bicarbonate of Soda (Baking Soda)
• 1 Banana (Mashed)
• 40g Sour Cream (3 Tablespoons)
• 25g Chocolate Chips (2 Tablespoons)
Ingredients for the Icing
• 125g Margarine (½ Cup + 1 Tablespoon)
• 70g Icing Sugar (½ Cup)
• ½ Teaspoon Vanilla Extract
• 1 Tablespoon Caramel Treat (or Condensed Milk)

Method 📖
1. Preheat the Oven - Preheat the oven to 160°C (320°F).
2. Line the Muffin Tin - Line a muffin tin with muffin cases.
3. Cream the Butter and Sugar - Cream the butter and sugar together until light and fluffy.
4. Add the Egg - Crack the egg into the small glass dish, check it, and add it to the butter mixture.
5. Add the Vanilla - Stir in the vanilla extract.
6. Mix in the Dry Ingredients - Gradually mix the dry ingredients into the butter mixture.
7. Prepare the Banana Mixture - Mash the banana and combine it with the sour cream.
8. Combine the Mixtures - Add the banana mixture and the flour mixture alternately, mixing until well combined.
9. Fill the Muffin Cases - Spoon the batter into the muffin cases.
10. Bake the Cupcakes - Bake in the oven for 20 minutes.
11. Cool the Cupcakes - Let the cupcakes cool completely while preparing the icing.
12. Make the Icing - Cream all the icing ingredients, except the Caramel Treat, using a hand-held blender until light and fluffy. However, you may decide to mix the Caramel Treat into the butter icing which makes it a lovely brown colour.
13. Decorate the Cupcakes - Dollop the icing onto the cupcakes and place a small amount of Caramel Treat in the centre of each one, or pipe the Caramel treat icing over the tops of the cupcakes.

Don’t Forget! 📌

You may wish to hollow out the centre of the cupcake and then insert some of the Caramel Treat into the centre and then top it with icing. Shavings of chocolate or even cocoa powder could be sprinkled over the top. If you want to get really fancy, drizzle the Caramel Treat on top of the icing.
